De Vere Oxford Thames Executive Head Chef Wins European Copper Skillet ChampionshipOctober 22, 2018
Claudio Costea, Executive Head Chef at De Vere Oxford Thames and BBC MasterChef: The Professionals’ alumni won the Senior Chef category at the IACC Europe Copper Skillet competition, which took place at Dolce CampoReal, Lisbon on 7 October 2018. Costea now progresses to the competition’s final stage, the global final, which takes place in Toronto at IACC Americas Connect in April 2019.
Claudio’s winning dish was pork loin wrapped in Parma ham served with saffron polenta cake with walnuts, seared cauliflower, and vegetables.
The competition, organised by IACC, is designed to highlight the artistry and skills of IACC-member conference venue chefs from around the world. IACC’s CEO, Mark Cooper commented: “There were nine chefs from around Europe competing and the presentation and quality of the dishes from all chefs were of a standard I would expect to receive in a top restaurant. It’s a real testament to the quality of conference and meetings food within IACC member venues. The winners will prove worthy contestants at the global finals in Toronto Canada at our next IACC Americas Connect event in April 2019.”
The Copper Skillet competition was introduced in 2004 to highlight the artistry and skill of the best chefs from IACC-member conference venues around the world, and to honour their contributions to the shared goal of providing an outstanding conference venue experience. The European stage of the competition is a qualifying round for the global stage of the competition, which will be taking place at the IACC Americas Connect 2019 event, in Toronto Canada from 10-11 April.
