Benjamin Parris, Executive Head Chef at De Vere Horsley Estate, located in East Horsley, was crowned Senior Chef Champion at the IACC UK Copper Skillet competition, held at The Woodlands Event Centre on 4th June 2019. Benjamin now progresses to the next stage competing in the European Copper Skillet final in Belgium, October 2019.

During the competition, participating chefs were tasked with creating a dish using basic pantry items and a “mystery basket” of proteins and other fresh, dairy and grocery items. They were given 30 minutes to prepare, create, and present their creations to the judges.  Benjamin’s winning dish was pan fried salmon fillet served with spring vegetables, pickled shallots and sauce vierge.

Commenting on Benjamin’s win, Michael Micallef, General Manager at De Vere Horsley Estate, said: “We’re absolutely thrilled for Benjamin on his win at the UK Copper Skillet. This is a testament to his culinary excellence, and of course, we’re also immensely proud of his work here at De Vere Horsley Estate. We wish him the best of luck for the European finals later this next year.”

IACC’s CEO, Mark Cooper commented: “At a time where conference food is rightly recognised as a critical element of the meeting experience for delegates, showcasing the quality of our member chefs here in the UK is fantastic. IACC meeting venues continue to lead the industry in culinary excellence and this group of chefs and this competition is a key part of showcasing their abilities.”
